DRY-AGED LEG OF DUCK WITH SWEET DRIED FRUIT

Ingredients :

Preparation :

1. Cook the spaghetti in salted water.

2. Drain the spaghetti and keep warm.

3. Rub the parmesan.

4. Remove the steaks from the refrigerator one hour before preparation.

5. Preheat the pan well.

6. Add a little olive oil to the steaks.

7. Fry in the hot pan for 2 minutes on each side.

8. Wrap in aluminium foil and leave to soak for 5 minutes.

9. Season the steaks with salt and pepper.

10. Fry the spaghetti in the pan.

11. Add basil pesto and parmesan cheese.

12. Swing everything hot once.

13. Spread the pasta on plates.

14. Cut the dry-aged steaks into fine slices.

15. Put the steak strips on the pasta.

16. Season with fresh pepper and Fleur de Sel.

17. Enjoy nice and hot.
